21. cool, refreshing meal

An apple a day keeps the doctor away so they say. However, I don't want to keep my doctor away so I don't eat an apple a day.  There are a variety of apples available throughout the year. Apples are a rich source of dietary fibre, potassium and flavonoids which help to inhibit the growth of carcinogenic substances.Eating an apple keeps you full for at least 2 to 3 hours. I prefer to eat apples in salads and not on its own. If I do have it on its own then I prefer it with a pinch of salt and red chilli powder. The crunchy apple salad is a very easy and quick dish to prepare. A nutritious but satisfying meal to have  for lunch . Use any variety of apple you like. I had the pink lady variety so used that. I have even prepared it using the green apples and love it. 20. pav bhaji

a humble but nutritious meal Pav bhaji is a very popular street food of India. In marathi pav means bread and bhaji means a potato based curry. Pav bhaji was a quick but light meal eaten by most mill workers in Mumbai. Most people visiting India do not leave the shores without having tasted pav bhaji. The street version, is usually full of potatoes, dried peas, tomatoes and onions, served with a generous helping of butter, raw onions, fresh coriander and a wedge of lemon. The bread is overly buttered, but that's what makes it so tasty. My first taste of this dish was when I was studying in Mt. Abu. On a very cold evening, the smell of butter and  fried onions was very inviting. I learnt how to make pav bhaji at home from Nunu, my mother-in law. She uses a variety of vegetables, a very innovative way of getting my young ones  but now adults, to eat vegetables they would usually frown upon. 19. 5 in one pasta sauce

sauces make all the difference Penne, tagliatelle, fettucine, fusilli, conchigliette, penne, macaroni are just some of the common types of pastas available readily in the market. I still have to come across a family which does not relish pasta. Pasta has become a common dish world over. My family loves pasta,definitely not the overcooked and mushy style! Making pasta practically every week is a challenging task if you don't want to stick to the common tomato or white sauce variety week in and week out. Use any type of pasta you like. And please for goodness sake don't over cook them. Most packets include the cooking time so follow it. Can use any type of vegetable that you like. I usually pick what is available in the market in Mombasa. You can use peppers, mushrooms, french beans, broccoli etc. Cut the vegetables into chunks. 5 IN ONE PASTA SAUCE for 4 servings ... generous helping!
