A Healthy Way of Life       Women constantly have to worry about weight issues. How many times have you heard men discussing about their weight problems? The world's general conception of a perfect figure, ideal weight, right curves in the right places for women is colossal. Niku loves this Many homes cook so many different cuisines that sometimes the original recipe is lost and an adaptation is made to suit the tastes of individuals and families. The first time I ever made tacos was with my kaki and we followed Tarla Dalal's recipe to the last dot. In her original recipe there is a green tomato sauce. Plans of making tacos revolved around the availability of the green tomatoes. Of course after so many years, green tomatoes have gone out of the window and I make my own version of veg tacos. Instead of salsa I make a wholesome salad. That was a tricky but clever way to get my young kids to eat salad. Usually the tacos are made from yellow corn flour which is difficult to get in Mombasa . I just take the normal ugali flour and sieve it. I use the finer ugali flour and to get the yellow colour add a bit of turmeric powder. crunchy green emeralds    Rainy season means loads of fresh crispy vegetables. Thats what exactly hit me when I entered the famous Mombasa Vegetable market this week. Just couldn't make up my mind as to what to buy. Wanted to buy the whole market. The deep green fresh broccoli kept on beckoning me to buy her, him?    It's Feta Cheese Time                Feta cheese is a Greek cheese usually made from sheep or goats' milk. It is then brined or pickled to give the salty, tangy taste and crumbly consistency. Modern commercially made feta is made from cow's milk. However Greece and Bulgaria still prepare is mostly from sheep or goats' milk. A single serving is about 38g. If you find the feta too salty soak it in water for 5 minutes to remove the saltiness. It is very difficult to find feta cheese in the normal grocery stores in India. To make paneer taste like feta, I would usually marinate it in salt and lemon for 2 to 3 hours. Though it doesn't taste exactly like feta, its still not a bad substitute. In Kenya, I buy Browns Feta cheese as the other cheese producers still have not got it right. five vegetables a day     Ten servings of fruits and vegetables a day is what is recommended as a part of an ideal meal plan. That gets one thinking that if I am suppose to eat all those veggies and fruits then when do I eat the rest? The rest I mean the yummy stuff like breads, rice, cakes, muffins etc. Its pretty simple, have a salad everyday and it will take care of your 5-6 servings of vegetables and fruits. Today this salad recipe does take care of at least five. My blog will feature a lot of salad recipes because that's a part of our meal everyday. I have included coriander leaves as a vegetable as one should not underestimate its health benefits. A cleansing agent, rich in iron, magnesium, an antioxidant, reduces flatulent are just some of the reasons why you should have coriander leaves. In some stores it is sold as cilantro.
