nutty flavour      I don't know how I bought carrots twice during my last visit to the market. When I was emptying the basket out, I realized I bought carrots twice from different sellers! How was that possible... don't know. So this week has been pretty carroty... carrot salad , grated carrot in dangella , carrot juice. The last few I used for making a nice tea bread. I had invited my friends over to our beach studio apartment and she said that they would have coffee with us. Initially I had planned to make some dessert but since coffee was the plan, I decided to bake a tea bread which I hadn't done in a long time. I am glad I baked this bread because it turned out delicious, nutty and the best part is that it's so easy to make.I had the last remaining slice for breakfast with some tea. You can serve the bread with tea or coffee or as a dessert serve it with some whipped fresh cream, hot custard, ice cream or ice it with cream cheese. CARROT AND APPLE NUT BREAD Makes ...

time to have tea My son's future in-laws visited us last week from France. It was their first trip to Kenya and we were meeting for the first time. So obviously my hubby and I were a bit nervous and were wondering how we would get along. Language would have been a bit of a probable but as soon as they came out of the arrival terminal, we met and instantly all the barriers disappeared. It was like we have known them for years. Language was not a problem as Dominique spoke good English and Monique understood quite a bit. On our part, I need to really gain more confidence in speaking French. They arrived in the afternoon and I knew that after a long journey they would need a good cup of tea or coffee and some snack. I decided to make a tea bread. The minute I googled tea bread, I got this yummy, easy recipe. I was looking more for a zucchini, pineapple or chocolate banana tea bread or any other but this tea bread sounded good. Again, I browsed through a few, put a few ingredients from...

Over ripe bananas !  I love banana bread and whenever there are a couple of over ripe bananas, its baking time for me. I have made it umpteen number of times but the egg version. Nunu, my mother in law loves banana bread but I had to find an egg less version. The hunt began on the cyberspace and somehow the recipe by 4th sense cooking seemed the right one. And lo behold it was the one! It turned out perfect the first time and after that I made some and sent it off with Ajay all the way to India for Nunu. I love the texture, the colour and obviously the taste. All food fanatics, visit 4th sense cooking.com for exciting photos and recipes. it's tea time I can't stay without baking for too long. As the days are getting hotter, I thought to myself, less baking so that the kitchen does not get too hot but unfortunately it is difficult to stay away from the oven. A few pineapple chunks were sitting in the fridge and I opted to try out an eggless pineapple tea bread. A bread without yeast, looking very much like a cake. I couldn't find any pineapple extract or flavouring in the supermarket here but must get some during one of my foreign trips. I used tinned pineapples and the juice but still my husband thought that it lacked the pineapple taste. Bananas tend to overpower the other flavours.  However, till I come across another good recipe, this is a good tea bread to have on its own or with butter, jam or honey. EGGLESS COCONUT PINEAPPLE BANANA BREAD 8 to 10 servings 1 cup plain flour (all purpose flour) 1 cup wheat flour ½ cup brown or white sugar 2 medium bananas  ¼ cup oil ½ cup finely chopped canned pineapple ...
