MEGA BLOGGING MARATHON -SEPT 2017 #80TH BLOGGING MARATHON THEME: PROTEIN RICH DISHES DAY:19     When I was planning what protein rich dishes I was going to make, peanut butter was on top of the list. I was planning to make a peanut butter and banana sandwich, but then I came across this delicious pudding recipe. It was also full of chia seeds so one recipe took care of both the protein rich ingredients peanut butter and chia seeds. What I really like about this pudding is that one can even have on days that you are fasting. I know many people fast all 9 days of Navratri without consuming grains, pulses, salt and vegetables. So here's just the right kind of pudding to energize you and make you feel full too. Just replace the normal salt with rock salt or omit it.    One should be a bit careful about the quality of peanut butter we buy. Many of them have transfat added to them to make the whole process of processing the nuts faster, also add...

631. Pina Colada Overnight Oats

Image
Sea, sand and Pina Colada      Ok, its not the drink Pina Colada that I'm going to blog about. However, the name Pina Colada makes one think of sunny sandy beaches, blue seas and lazing on the sunbed with a Pina Colada to keep you cool.       The #FoodieMonday #Bloghop group decided on #Coconutmilk as the #86th theme . I was happy as I could just think of pina colada muffins (which has been on my 'to do' list for ages). However, hubby dear dashed all my hopes of baking muffins as he just said pretty adamantly 'no baking muffins in this house, there's been too many muffins.' Truthfully, haven't blogged a new muffin recipe in a long time, but how do I explain to hubby dear that the ones I baked last week were for friends and neighbours as they had requested for them. Anyway, will bake them pretty soon.     So, now had to think of a healthy way to use coconut milk. I've already blogged quite a few Kenyan coastal dishes using coconut milk so wha...

560.Chia Seed Pudding

Image
a healthy treat   These days the new health rage is seeds like chia seeds, hemp seeds, flax seeds, any thing that is coconut, mixture of fruits and vegetables. The list is endless. Even before chia seeds came onto the market, India has been using falooda seeds, Basil seeds or takmariya or sabja as its commonly known in faloodas and added in milk to give a cool refreshing drink. I remember pestering my mum to add spoonfuls of takmariya in my milk. She would tell me that too much is not good. Contrary to her belief basil seeds and chia seeds are very healthy.  There are slight difference between basil and chia seeds.  While basil seeds are derived from basil plant which is mainly found in the Mediterranean region and Indian Sub -Continent, chia is derived from a plant called Salvia Hispanica, a type of mint mainly found in Mexico and Guatemala.  The word chia comes from the Aztec word which means strength. Chia seeds can be eaten raw or soaked whereas basil seeds have ...

Healthy start to the day      Many of us cannot begin the day without breakfast, some don't have breakfast at all and some just need their daily mug of coffee or tea to begin the day. I cannot skip breakfast especially when I am not fasting. I love to have bread and tea or cereal. However, I have recently got hubby dear to have oats instead of cereal as they say even though he has bran flakes, all cereals contain sugar. I prefer to have a nice thick smoothie. Whatever ingredients I use for his porridge mine go into the blender. My day begins with work in the kitchen before the water disappears, yoga and then after a cold shower, and my prayers I relax and enjoy my breakfast. Its during that time I catch up with all the messages, make calls when required, do a crossword and read the paper. For this month the shhh cooking secretly group decided to have #smoothies as the theme for April. My partner Priya of Priya's Menu   gave me banana and peanut butter as the two...

93. falooda

Image
pink, rosy, yummy Falooda is orignally a Persian recipe brought to India during the Mughal period. Since then a lot of variations of falooda are available in most fast food restaurants in India. It is a very cooling and filling but sweet drink. Falooda can be made from kesar syrup, with mango, figs, actually what ever you prefer. I have made the traditional falooda with rose syrup so hope you like it. Falooda seeds or chia seeds are very tiny seeds packed with energy and omega 3. Most indians believe that having falooda seeds with milk, keeps the body cool and is an excellent remedy for acidity. Try using the seeds in your porridge or cereal. It will keep you full till lunch time or beyond. FALOODA Serves 12 1 packet red jelly 1 cup thin vermicelli 6 cups cold milk 12 tsps rose syrup 1 cup chopped mixed nuts 12 scoops vanilla ice cream 6 tsps falooda seeds, chia seeds As per the instructions on the packet prepare the jelly.
