705. Huevos Rancheros (Mexican Style Breakfast)

MEGA BLOGGING MARATHON -SEPT 2017 #80TH BLOGGING MARATHON THEME: PROTEIN RICH DISHES DAY:22    As I was going through my files, I came across this recipe in the draft. I had completely forgotten about it. I had prepared this delicious and filling breakfast dish for the Blogging Marathon theme Breakfast for the month of August which I had to back out of as I got too busy with guests. It was during one of my visits to Jean Talon market in Montreal that I came across a stall that had made fresh corn tortillas. These were made with white corn and not the usual yellow corn. I bought a packet as I had planned to make Huevos Rancheros. Oh well, perhaps this recipe was meant to be a part of the protein rich dishes. As we are nearly ending this Mega Marathon, I've realized that I've got so many other recipes that I'd wanted to prepare for this theme. Simply Fun    The Bread Baker group theme for July was set by Gayathri who blogs at Gayathri's Cook Spot . She suggested braided bread as the theme. Braided breads are a work of art by many professional bakers. Some are simple and some are so elaborate. However, they do look beautiful if perfectly mastered. Before I go into my braided bread, I must mention that Gayathri is a wonderful baker. Mostly all her bakes are without eggs and she has also experimented baking using aqua faba. Musical Food? Theme: Explore Latin American Cuisine BM#77 Week 2 Day 3     I tried really hard to avoid Mexican Food for the above theme. I wanted to try something different but sourcing some of the ingredients was proving to be a task. I wanted to make arepas but getting some pre cooked white corn meal was difficult. The staple diet in Kenya is ugali made from white corn meal or flour but the corn is not pre cooked before it is ground.        While I was doing some research on the Latin American Cuisine, (which by the way is so similar and may vary in small degrees, depending on which country it is from) I came across Flautas. Rice for Breakfast! Theme: Explore Latin American Cuisine BM #77 Week 2 Day 2    My exploration on the internet (what would we do with google?) took me to Costa Rica. As I mentioned in my previous post I had to restrict myself to ingredients that are available in Mombasa. What caught my eyes was an interesting breakfast dish that most Costa Ricans have and that is Gallo Pinto. It translates as 'spotted rooster'. The mixture of cooked rice and cooked beans together gives the impression of a spotted rooster. It is believed that there is no one version that all the Costa Ricans enjoy. They all have their versions of the breakfast dish. all you need for this dish as the core ingredients are old cooked rice or leftover rice and some cooked beans. When I say cooked beans it means beans that are soaked and cooked and not out of a can. However for a quick version I guess you can use canned beans. Where Are The Yolks????      Mondays come too fast. Imagine we're already into the 5th month of the year. Time flies. The 91st theme for #FoodieMonday #Bloghop group was decided by fellow member and blogger Nisa . She asked us to prepare something that will not take more than 20 minutes. With #20minrecipes as the theme, I thought smoothies, salads, energy balls. All these barely take 5-10 minutes. It probably takes longer to gather up the ingredients. I thought one more salad and my group would say 'oh no not another salad,'. Smoothies ??? No its a bit cold to have them. Did I mention its finally raining? Energy balls... I swear I had some medjool dates but can't find them in the overstuffed fridge. In Mombasa our fridge is the pantry.
