705. Huevos Rancheros (Mexican Style Breakfast)

MEGA BLOGGING MARATHON -SEPT 2017 #80TH BLOGGING MARATHON THEME: PROTEIN RICH DISHES DAY:22    As I was going through my files, I came across this recipe in the draft. I had completely forgotten about it. I had prepared this delicious and filling breakfast dish for the Blogging Marathon theme Breakfast for the month of August which I had to back out of as I got too busy with guests. It was during one of my visits to Jean Talon market in Montreal that I came across a stall that had made fresh corn tortillas. These were made with white corn and not the usual yellow corn. I bought a packet as I had planned to make Huevos Rancheros. Oh well, perhaps this recipe was meant to be a part of the protein rich dishes. As we are nearly ending this Mega Marathon, I've realized that I've got so many other recipes that I'd wanted to prepare for this theme. However, like this breakfast dish, the others will appear in some theme or the other in the coming future.     What is Hue...

Kenya is no doubt a beautiful country. From Mountains to beaches. Mount Kenya, the 2nd tallest mountain in Africa, is a mountain climbers dream with jagged peaks. Grasslands or Savannah, pristine beaches, The Rift Valley, every part of the country there is something to see. Kenya is well known for its wildlife like lions, cheetahs, leopards, zebras, gazelles, elephants, buffaloes, hippos, giraffes, rhinos and so much more. Shrubs to baobab trees, filled with all sorts of flora and fauna. The famous song in Lion King, Hakuna Matata means no problem. Simba means lion in Kiswahili and Rafiki means friend. 193. healthy ugali

kenyan diet    Ugali or sima as its called down at the coast is a very healthy meal which unfortunately no longer is a part of the daily diet for so many young Kenyans. Sausages, chips and other junk foods have become more convenient and appealing. However, it is still the basic meal for the common man. Ugali is made from white maize flour or what is commonly called here maize meal. Filling, full of good carbohydrates, minerals and vitamins, ugali is very easy to prepare. I learnt how to make it from my house help Julius. However he still thinks I don't know how to make it. But shhh, I do prepare it on his days off. Ajay loves ugali and we tend to make it often.  I serve it with chicha (amaranth) and fresh red beans, sukuma wiki ( kale), cabbage vegetable or Neel's orange dal . Most Kenyans have it with any meat, fish or vegetable dish. You can prepare the vegetable or meat dish ahead but make the ugali just before serving.    Some homes make the ugali and ...
