MEGA BLOGGING MARATHON - APRIL 2018 #87TH BLOGGING MARATHON THEME: EXPLORE THE FLAVORS - INTERNATIONAL BREAKFAST DAY 1 "Breakfast like a King, Lunch like a Prince and Dine like a Pauper" goes a famous saying. Why am I talking about breakfast? The reason is that the Blogging Marathon group participates in the Mega Blogging Marathon twice a year. I participated in my first one last September where we made 26 protein rich dishes . For the #87th the theme is Explore the Flavors where one has the option of participating in the breakfast, street food,  Indian sweets, lunch box dishes for elders, kids lunchbox, no refined sugar or refined flour, no onion no garlic and wholegrain. Enkare Nyrobi - Cool Water        I've been spending some time in the capital city of Kenya, Nairobi. Nairobi gets its name from the Masai phrase Enkare Nyrobi which means cool water. It perhaps was names so as its got the Nairobi River flowing through it. However, the river is no longer what I remembered it as. Its polluted and the flow has reduced due modernization.  I was born and brought up in Nairobi but have been living in Mombasa for the past 35 years. Usually when hubby and I are traveling abroad, we do not bother to come into the city and prefer to catch our connecting flight. The traffic in Nairobi is a nightmare in spite of all the new highways and numerous inner roads. The new roads are not able to cope with the ever increasing number of cars on on the road. Cinnamon Raisin Sourdough Bread#BreadBakers Breads with Preferments    When Karen of Karen’s Kitchen Stories  announced breads with levain, I was excited. Here was a theme that was going to push me to make my own sourdough starter. We were allowed to use other starters like biga, poolish, soakers, tangzhong etc. I left those options if only I failed with the sourdough.    Last year my brother in law from Nairobi had given me a bit of the starter from his batch. I brought it back to Mombasa and fed it till it was nice and bubbly. I tried making a sourdough bread and the mass of dough was just too unmanageable for me. The bread failed in a big (major!) way. The sourdough went into the fridge and stayed there for a few days. Took it out and used it a bit for pancakes.    After that it was forgotten! Coconut and Rum Theme: Surfing Through The Caribbeans BM #81- Week 1 Day 3    A Caribbean cuisine theme would be incomplete without a Jamaican dish. Whenever one mentions the Caribbean, Jamaica is what pops up in my mind and I hear its one of the few countries where a Kenyan passport holder can go to without prearranged visa :) A country that has a diverse population, the indigenous tribe, Africans, Indians, Europeans and Chinese. Under the Spanish rule it was called Santiago but after the British took over, they named it Jamaica. Some famous Jamaicans are Bob Marley, the reggae musician, Usain Bolt the sprinter, Chris Gayle cricketeer who plays for West Indies are a few I know of. Easy dessert Theme: No Bake Desserts BM#78 Week 3 Day 1     I love making easy desserts. It usually means I get to serve it in a glass and its just a matter of putting a few ingredients together to make a satisfying dessert. Srivalli, the starter of Blogging Marathon suggested that for this theme we make desserts that normally we would bake but instead to beat the heat, make them in such a manner that we don't have to bake them in a convectional oven.      When I decided to choose the theme, the first baked dessert that came to my mind was apple crumble or as its known apple crisp. Basically, chopped apples mixed with a bit of butter, sugar and cinnamon are layered in a baking dish. Then its topped with a mixture of plain flour, butter, oats and cinnamon. The dessert is baked. At the bottom you have the soft apples and the top is crispy, crunchy. Its usually served with ice cream...a hot dessert with cold ice cream. I love this dessert.      So I ...
