Double Chocolate Cookies

Double Treat Theme: Kid's Delight - Chocolate Dishes BM#85 Week 2 Day 2    I often bake chocolate cakes, cookies and muffins for my niece and nephew. Whenever hubby and I visit his uncle, I take either cookies, muffins or cakes for the kids. For my nephew its the more chocolatey the better. I still remember when he was in hospital with dengue fever, he wanted to have chocolate cake and asked me to put chocolate pieces in them. That's how much he loves chocolate. The next few days the only food he'd eat was cake. My niece now tries out some of the cakes that are on my blog. Its such an overwhelming feeling; the niece that I used to bake for now bakes for her family.     When I chose the chocolate theme, I didn't have any specific recipes in mind. I then realized that though I bake a lot of cookies, I don't have  chocolate chip ones on the blog. I baked these cookies and immediately took photos as they were fast disappearing. I had to hide some of them for my...

Cheese Stuffed Garlic Pull Apart Bread#BreadBakers Theme: Pull Apart Breads   Pull Apart Bread has been on my 'to do' list for a long time. I've done mini ones in a muffin pan, but wanted to bake one in a bundt pan. However, the bundt pan part didn't really work out but the pull apart bread got baked.    My daughter keeps on insisting that she's not going to eat much carbs, so initially I tried baking half the recipe to give a small loaf. First all, its the first time I'm halving a basic bread recipe so forgot that I should add less salt. The small miserable looking loaf didn't come out too well and it was salty. However, my daughter liked the idea of tiny pieces of bread stuffed with cheese so she insisted that I bake one for her to take to work. That was a relief as I now could bake the normal 3-3½ cup flour bread. I used a small cake tin and the shape came out much better, the rise was good and yes it wasn't salty.   Pull Apart Breads is the Novembe...

721. Sourdough Pita Bread

Image
Happy with my "Princess"    A weird title, right? Well, Princess is the name I've given my sourdough starter. At first I thought it like a weird idea to name the starter. Everyone who successfully makes a sourdough starter at home names it. I was wondering why. Now I know. You actually nuture it like a pet. Feed it and make sure its in the optimum environment.     Most days Princess is happy sitting idle in the fridge but on occasions I take her out and actually make something. This time round I made sourdough pita bread. I used a combination of wheat and plain flours. The pita bread turned out super yummy. I love the slight sour taste and did I mention it was so much lighter on the tummy than the normal pita breads?     Go on make pita bread and enjoy it with some falafels or use it to make your favorite sandwich or just enjoy it with a dip.  I had one left over and next day I enjoyed it with a cup of masala tea. I warmed it up on a frying p...

Include Millet In Your Diet Theme: Cookies For Your Sweet Tooth BM#81 Week 2 Day 3    Today has been such a horrible day for me. I wait till 9a.m. for the maid to turn up. I had planned so many Diwali cooking and baking items but didn't get even one done. She turns up after 9 and goes and sits down. I was a bit annoyed so didn't say anything. After a few minutes I hear long sighs... what a brilliant way to attract attention. I go to her and she tells me she is sick. So I tell her to go back home and rest and come back when she is well. She continues to sit there. The softie me asks her if she needs a cup of tea. She says yes. So I make some tea for her. She sips on the tea and then asks for money as she needs to go to the doctor. I really was mood spoilt by now... its not the end of the month and already she owes me quite a bit of money. She leaves.     I start tackling the housework. By mid morning I am so annoyed and lit...

717. Rose and Cardamom Cookies

Cookie,a must with tea or coffee Theme: Cookies For Your Sweet Tooth BM #81 Week 2 Day 2    Isn't it intriguing that when one has tea or coffee during mid morning or in the afternoon, one feels like having a cookie with it? I do. I usually want to have one small cookie with my afternoon tea. My siblings and I grew up having biscuits as we called them back then with our glass of milk. I enjoy dunking my cookie or biscuit in the tea, milk or coffee. A few places in the world will automatically serve a small cookie along with some coffee. I like that special treat whenever I get it.    I enjoying baking and cookies was what I learnt how to bake first. Then it was cakes and later on breads.  I love trying out new flavors. Rose and cardamom is one of them. A couple of years back I had gone to the spice souk when I was in Dubai. I picked up some dried tiny pink roses and they smell so heavenly. When I got home, I put them in a ziplock ...
