Recipe Swap 3     Food Bloggers Recipe Swap is a group of food bloggers who prepare a dish from a blogger's blog. The group initiator Amber pairs up the participants. We then decide what we want to make from our partner's blog. Usually we add a slight twist of our own or cook it the way we like but the main ingredients remain the same. At the end of the month we share our recipe link on the FB page.    For the month of March, I was paired with a new member Sapana. Though she is new to the group, I've known Sapana for a couple of years through another blogging group. I don't mean the internet or media kind of socializing but actually going out there and meeting people? A fulfilling bowl Theme: Healthy Weekday Lunches BM#77 Week 4 Day 3    When its really hot and humid in Mombasa, the last thing hubby and I want for lunch is curries, parathas and rice. I try and make exciting salads which are filling and yet healthy. As I've mentioned before I like my salads to be as colourful as possible. I like falafel but having it with pita bread can be heavy on the stomach during the hot season. I hate frying food during the hot season and will only fry if I have guests over.    I baked the falafel, but it was refusing to turn that nice golden colour. I didn't want to keep on brushing more oil on it. However, the baked ones tasted really good with the salad. However, if you want to fry them then please go ahead.    To make it a filling meal (something that will not have hubby running to the fridge in 1 hour!) I added quinoa. Ideal Workplace lunch Theme: Healthy Weekday Lunches BM#77 Week 4 Day 2    During my visits to Bangalore, I've prepared healthy and filling salads for my daughter to carry to work. She doesn't like me adding fruit to the salad. The salads have to be filling and yet not too heavy. Pasta salad is one of the salads I prepare just not for her but also for myself. Hot days usually means salads for lunch. I pack the dressing separately so that the salad stays crispy and one can choose the amount of dressing they want to add to the salad.    This parsley and walnut pesto tasted so amazing. Since it was a simple salad, the star is the pesto sauce. Initially I thought that the taste of parsley would be overpowering but believe me it was not... and I had to use the curly parsley instead of the flat one. Usually pestos call for a copious amount of olive oil. I decided to reduce the amount oil and used a bit of water instead. If you add water, the pesto stays good only for a few...

Healthy and filling Salads Salads don't have to be boring. You can make a wholesome and filling meal by adding your choice of vegetables, fruits, nuts, rice, pasta, quinoa, bulgur wheat or whatever you like. The final combination should look colourful and appetizing.  Here are a few salads you can make as a light meal for dinner or even as packed lunch. Just pack the dressing separately in a little jar or bottle. Drought--A national disaster          2016 did not bring enough rains to many parts of Kenya. Fast forward to 2017 and out of 47 counties 23 which are arid or semi arid parts of Kenya are facing drought. Rivers have dried up, animals and humans are dying without food. A National and International appeal has been sent out to help these areas with food and water. NGOs, Charity organisations, Private companies all have sent out foodstuff, but that is not enough. If the long rains do not arrive by April, then many more will die without food.                   Nakumatt has put a huge box near its exit if anyone would wish to buy some foodstuff to be donated. Peanut and Fruit Salad(Chaat) #Fantastical Food Fight Trying to eat healthy        When you're a food blogger and food is your passion, its pretty difficult to stay away from all those tempting recipes out there in the cyber world and cook books. I get tempted to try out so many recipes and the more calories it has the temptation level is that much higher!          Recently I joined this group called Fantastical Food Fight . I got tempted to join after I saw the absolutely tempting cookies made by Karen of Karen's Kitchen Stories . After I oooooogled at the photos till I was drooling, she suggested that we should check out what other members of the group had made. I scrolled down and recipes had me salivating.      Just when I joined, the theme for March happen to be PB&J (peanut butter and jelly).And I thought oh no here goes out the healthy eating... but as I read on further, Sarah Ellis (host of the group) mentioned that...
