MEGA BLOGGING MARATHON -SEPT 2017 #80TH BLOGGING MARATHON THEME: PROTEIN RICH DISHES DAY:7    During our last few days in Montreal, hubby and son were wondering how come I'm not taking up their offer to dine out. Don't get me wrong as much as I love preparing and trying new dishes both for blogging and otherwise  I at the same time love eating out.     However they both didn't know that I was on a mission to prepare Protein Rich Dishes with ingredients that I knew I would not get in Mombasa and Tofu being one of them. Sometimes I feel that we should shift to Nairobi and then I'd get all the ingredients I want. So hubby dear will say "OK I don't mind, but are you 1) willing to deal with the horrendous traffic, 2) Prepared that I will be leaving home very early and coming back very late, 3) though food may be cheaper in Nairobi are we ready to pay more for everything else?" with rice or noodles?     Before you read further, this particular recipe got left in the draft section and I forgot all about it. So publishing it today, hope you enjoy it.     In the month of February our Lions Club of Mombasa Bahari hosted an essay writing competition for students from the ages 11+. This is an annual event, but each year brings its own surprises. What impressed me was that this year most of the students had lovely handwriting which is a miracle considering that lots of school work is done on computers these days. However, I noticed that all of them printed the letters and none wrote in joint handwriting. Does this mean that schools no longer teach the children cursive writing? Isn't joint writing or cursive writing faster? While taking a round to check out what the students were doing and if they needed anything, I noticed one student had a calculator on his desk. is it bean cards or bean curds :)   Have you noticed how bean curds in so many Chinese restaurants and Indo - Chinese restaurants is spelt as bean cards? Bean curds or tofu is not tasty on its own but spice it up and it becomes a protein rich dish for vegetarians. During my trip to Nairobi recently, I bought some tofu (don't get it easily in Mombasa). My husband claimed that he would not eat it so I better finish all of it on my own. I love tofu so thought "that's ok by me as I can easily use it in various forms".   What is tofu? Tofu is like paneer, but not made from a dairy product. Its made from soya beans, water and a curdling agent. There are two types of tofu available, silken or soft tofu and the regular or firm tofu. Silken tofu is often used in place of dairy products for desserts,dips and smoothies. Tofu has the ability to absorb new flavours and spices through marination or sauces.
