MEGA BLOGGING MARATHON - APRIL 2018 #87TH BLOGGING MARATHON THEME: EXPLORE THE FLAVORS - INTERNATIONAL BREAKFAST DAY 2 "Breakfast like a King, Lunch like a Prince and Dine like a Pauper"     Before I venture into today's recipe, I would like to show off a bit of the azure blue skies and sea that lines the east coast of Africa. We in Mombasa are so lucky to have the beautiful Indian Ocean. Hubby and I spent the Easter holiday at the Bamburi Beach and every day it was a delight to walk on the beach. Though at time of the year the beach is strewn with seaweeds, believe me when I tell you that its a sign of a healthy sea eco system. When the tides is out, little puddles of water is where one can find sea cucumber, sea urchins, star fish and beware of the occasional porcupine fish and the numerous tiny blue jelly fish. Its a delight to watch people playing football on the beach, children building sand castles or digging holes so that they can 'bury' their siblings, fri...

Cheese Stuffed Garlic Pull Apart Bread#BreadBakers Theme: Pull Apart Breads   Pull Apart Bread has been on my 'to do' list for a long time. I've done mini ones in a muffin pan, but wanted to bake one in a bundt pan. However, the bundt pan part didn't really work out but the pull apart bread got baked.    My daughter keeps on insisting that she's not going to eat much carbs, so initially I tried baking half the recipe to give a small loaf. First all, its the first time I'm halving a basic bread recipe so forgot that I should add less salt. The small miserable looking loaf didn't come out too well and it was salty. However, my daughter liked the idea of tiny pieces of bread stuffed with cheese so she insisted that I bake one for her to take to work. That was a relief as I now could bake the normal 3-3½ cup flour bread. I used a small cake tin and the shape came out much better, the rise was good and yes it wasn't salty.   Pull Apart Breads is the Novembe...

Cute bread rolls Theme: Surfing Through The Caribbeans BM #81- Day 2    Today we are visiting Guyana. Its a sovereign state on the northern mainland of South America. Before you think I've got my facts wrong about the Caribbeans, Guyana though not an island in the Caribbean, it is a part of the Caribbean region mainly because of its strong cultural, historical and political ties with the Anglo Caribbean countries and the Caribbean community. A state with a diverse population consisting of people from Africa, Europe, China and India along with the indigenous people. Colonised by the Dutch and English, people were brought to Guyana to work on the plantations and rice fields.    Guyanese cuisine is influenced by English,African, East Indian,Portuguese, Chinese, Arabian and Amerindian influence. Chilli and Cheddar Potato Rolls#BreadBakers Happy Dussehra      Today is Dussehra. What is Dussehra? Dussehra is a festival celebrated by Hindus all over the world. Usually, no Hindu festival is celebrated for just one reason. The word Dussehra comes from the sanskrit word Dasa hara, meaning defeat of Ravan. Ravan was an evil demon King ruling over what is present day Sri Lanka. Ravan was enthralled by Sita's beauty and wanted her. Sita was married to Lord Ram(the seventh incarnation of Lord Vishnu). Ravan abducted her and took her back to Lanka. Thus began the war between Ram and Ravan. The day Ram killed Ravan is celebrated as Dussehra, signifying victory over evil.       The second reason Dussehra is celebrated is because its on this day Goddess Durga was able to defeat the evil demigod Mahishasura(who wrecked havoc on earth) after fighting with him for nine days and nights.        Dussehra is usually celebrated by burning effigies of...

Happy Mother's Day   It's Monday (don't they come fast) and our 39th theme for      #FoodieMonday#Bloghop is #MothersDaySpecial . For this theme we were allowed to make something special for our mums or prepare one of their recipes. I chose to prepare one of my mum's all time famous and popular dish, her maida parothas. She would make these simple and yet so so so delicious parothas for breakfast. She always prepared hot ones for all of us. It was an absolute treat to have these parothas with masala tea and pickle. When she became too sick to cook, I had on occasions prepared these parothas for her and she enjoyed them.My mum mostly made Gujarati style food. Her secret was to keep it simple, using simple fresh ingredients. Part of the reason for starting my blog was to note down some of her famous recipes before they just got lost. Its a pity she never got to see how many of her recipes I have made. I've made her favourite dishes and her specialities. She loved idl...

comfort food on a rainy day Theme: Redo Old Posts BM#85  Week 4 Day 2      25/02/2018    When I look back at my old posts, I sometimes think 'really did I take those pictures?' Not that I'm any better now as there's still so much to learn about photography and styling. However, I do want to give myself a pat on my back as I certainly have made improvements. Some may think redoing a post is easy but seriously it is not. There are some I consciously make an effort to make again, remember to take photos and go back and re write the write up, add new photos make corrections to grammatical mistakes etc etc. And then there is the sharing bit on all social media. Most of my old posts will not have been tweeted or you wouldn't find them on Instagram. Basic recipes that I make so many times, I just forget to take the photos. When I have to share them or use them to attach to other posts, I just want to cringe and kick myself for not remember...
