103. broccoli soup

  A bit of a drizzle and most of us in Mombasa presume that the cold season has begun. Its time to have hot bhajias, hot soup, any hot comfort food. On a serious note it never gets that cold in Mombasa to have those kind of urges. That does not mean we do not make soups and bhajias. We just set the air conditioner on a lower setting to feel cold! Fresh green broccoli is what I got from the market this week. Made this delicious soup with the garlic rolls. Check out the garlic roll recipe.

     This post was first posted in 2012. Since then weather world wide has changed. A few days ago, we were experiencing really hot weather in Mombasa whereas the rest of Kenya was suffering from floods. In rural areas flooding is mainly due to lack of trees and in some areas where rivers are swelling. In the urban areas the flooding is largely blamed on construction and drainage system being clogged with rubbish. This week it has been raining in Mombasa and the temperatures have dropped suddenly. Though we don't need to wear a cardigan, I still feel like having something warm. So nothing beats soup and hot milk.







BROCCOLI SOUP
4 Servings

2 cups of tiny broccoli florets
1 small potato, peeled and cubed 
1 small onion, chopped 
4 cloves of garlic chopped
½ cup fresh chopped coriander
1 tbsp butter or olive oil
2 cups fresh milk
½ cup water or stock
¼ tsp nutmeg powder
¼ tsp pepper powder
2 -3 tbsp almond flakes
4 tbsp grated cheese (optional)
1 tsp salt

  1. Heat oil or butter in a pan over medium heat. Add chopped onion, potato and garlic.
  2. Cover the pan with a lid and cook the vegetables for 2-3 minutes over low heat.
  3. Add water, cover  the pan and cook over low heat for 5 minutes.
  4. Add the broccoli florets and stir. Let it cook for 2 minutes.
  5. Add  milk. 
  6. Puree the mixture along with the coriander.
  7. Put the pureed mixture in a pan. Gently heat up the soup. Add salt, nutmeg and pepper powder.
  8. Just before serving garnish with almond flakes and grated cheese.
Tips :
  • If you like, add a small green chilli when you saute the potatoes and onion.
  • Instead of 2 cups of milk add 1 cup milk and 1 cup fresh cream for a more richer soup.
  • Instead of cheese serve with a dollop of cream.
  • Use coconut milk instead of normal milk.
  • Adjust the salt according to your preference.
  • If you find the soup too thick, just add a bit more of water, stock or milk. 
  • Add chilli flakes if you like.
