satisfying my craving


Yesterday while I was waiting for hubby dear to get back home for lunch, I suddenly had a craving for something sweet. No chocolates, muffins, ice creams, candies but a craving for some Indian sweet. I think what they say about letting oneself get so hungry that you start craving for sugar is so true. Ajay got stuck with some patients and I was flicking through channels and thinking of some Indian sweet. Shiro, seviyan....no it would take too long to make them. Actually those two do not take up much time but remember I am on a craving high... so anything that would take more than 5 minutes seemed like forever. Suddenly the sugar starved brain flashed,blinked, sweet sev, sweet sev, sweet sev. So leaving the tv on, rushed to the kitchen, got the ingredients together and began making sweet sev or vermicelli. Rachel, my maid who was quietly and gingerly working on utensils, suddenly felt as though a tornado had hit her and not Oklahama. She decided to quickly leave the kitchen to tackle some other work leaving me to my antics.
Sweet sev is very easy and quick to make and a sure delight to satisfy ones craving.



SWEET SEV OR VERMICELLI
Serves 4 

2 cups vermicelli broken into managable size
3 tsp clarified butter (ghee)
4 tbsp powdered sugar
1 tsp cardamom powder (elachi)
3 tbsps finely chopped pistachio and almonds
3 cups water

  1. Put the water to boil in a deep pan over medium heat.
  2. When it begins to boil, add the vermicelli.
  3. Stir constantly so it does not stick together. 
  4. Cook for 2 to 3 minutes or until done.
  5. Drain the vermicelli out into a sieve.
  6. Shake the sieve to remove any excess water.
  7. Put the cooked vermicelli into a serving bowl or plate.
  8. Add ghee and sugar to it. Mix it up well.
  9. Garnish with cardamom powder and chopped nuts.
  10. Serve immediately. 
Tips :
  • Serve the sweet vermicelli with some extra powdered sugar and ghee on the side in case anyone wants to add some more.
  • Can add more coarsely chopped nuts.
  • Add nutmeg powder if you like.
