A Belated Happy New Year    A belated wish is better than none, so a belated Happy New Year to all my friends, family and followers. I've been on a no blogging much required vacation. Sometimes its truly relaxing just to turn your mind off from blogging and any blogging related activity.     Hubby and I were supposed to spend Christmas and New Year with my son, daughter in law and her parents. We were on our way to Bali when we received a message from my son that Elodie my daughter in law had met with a motorbike accident. The remaining 4 hours of flight were stressful as we had no idea what had exactly happened. On landing at Denpasar, Bali, we had to head straight to the hospital. After tests, scans and whatever procedures were required, she underwent five hours of surgery. Her jaw was fractured into 5 pieces which the surgeon had to put together without damaging her nerves. 283.yummy corn snack

Easy snack Sweet corn is in season at the moment. I bought the sweet corn with the intention to boil the cobs and take out the kernels and freeze them for using in a variety of dishes right from soups, pastas, salads to parathas. Its a much better option than using canned ones. Not saying I don't use the canned ones, I do but whenever I can, I prefer to use the fresh ones. About 3 to 4 cobs yielded quite a bit of kernels. Some went in making soups and some in a salad. Yesterday was a wet rainy day and I had a sudden craving to have buttered corn. You know the type we get at movie theatres in India or are sold in the malls. There is a corn stand at the Broadwalk mall in Edgware, and you can smell the buttered corn for miles. I had  hot corn for the first time at the PVR cinema in Bangalore, some years back. 285. quick kulfi

Its mango again! I love making kulfis and yet again it was  mango kulfi. When mangoes are found everywhere in Mombasa, I just don't seem to see any other fruit. The previous 2 kulfi recipes have been different. I made one with evaporated milk and fresh cream. The other one was with mawa (solid milk) and this one is using fresh cream and sweet condensed milk. It is a much quicker method than the mawa one and tastes equally good. Kulfi making has never been easier. For this recipe I used mango puree but you can use any fresh fruit puree of your choice. I served this kulfi with some passion fruit pulp and the sweet and tangy taste was heavenly.
